OLIVE GROVE TREATS GLUTEN FREE with TLC!
At the Olive Grove service and safety mean the same thing! An in-house protocol has been established to assure the safety of their gluten-free diners. Servers clearly communicate to the chefs which meals are to be prepared gluten free with a 'celiac' notation. Additional sensitivities are also noted. When a diner requests a 'celiac item' and french fries, (that are not safe for celiacs), the manager will meet with the diner to ensure that they understand that the fries cannot be considered gluten free. The Olive Grove is finding that many 'regular' diners are opting for gluten-free options, because they prefer the taste!

Anyone living or traveling to Vancouver Island are strongly advised to make the one block detour off Highway 1 at High Street and turn Wild Poppy into their go-to gluten-free destination!
Kate and Geoff Cram, owners of the highly regarded Old Town (wheat) Bakery in Ladysmith put their sons on a gluten-free diet in an effort to address persistent health issues. The improvement was nothing short of remarkable and a heads up to Kate that gluten was taking it toll on her as well.
Kate refocused her training as an Associate with the Culinary Institute of America and Red Seal Baker in Canada to develop an absolutely scrumptious array of gluten-free baking, and establish a wholly separate business: 'Wild Poppy Bakery & Bistro, dedicated to gluten and peanut free. Three weeks after it opened, Kate’s health was never better and business was booming. “It is heartwarming to see people coming in knowing that the options are limitless.”
While Geoff continues to oversee Old Town Bakery, Kate and a small army of staff are dedicated to Wild Poppy, creating baguettes, cheese cakes, cookies, fruit tarts, granola, light lunches and soups - all from documented to be gluten-free ingredients.

• Water-based liquids are most suitable for use along with certain flours while fat or egg-based moisture works better with other flours?
• Different starches have wholly different characteristics?
• The amount of xanthan gum to use in a recipe is not determined by the amount of flour called for (as we’ve long been told), but instead by the amount of liquid?
• Would you know how to make a foam and what to use it for?
I can’t wait to get my hands on this book and hope we will have more seminars with these very knowledgeable women! In the nearly 13 years I’ve been involved with the chapter, I think this was the one of the very best presentations I’ve attended.
